On an electric coil or glass top, each element is switched either by an infinite switch behind the knob or by a relay on an electronic board, and a switch whose contacts have welded together keeps feeding full power. Induction zones are driven by a power board that can lock up the same way. Whatever the type, heat you cannot switch off is a fire risk, and the range has to be isolated rather than watched.
