What C-23
actually means.
C-23 points at the temperature probe, the cable-and-spike thermometer that plugs into the oven wall. Dacor's manual says the probe sensor reads as shorted while the oven is operating.

What to do when C-23 shows on the rangeKind of codeTemperature sensor
The oven sensor sent a reading the control would not accept, or one that climbed well past the setting. A loose plug or a sensor that has drifted is ruled out before the control board, and a temperature that keeps rising means the range is switched off at the breaker first.

Unplug the probe, turn the knobs to OFF and restart; if C-23 persists, cut power for at least 30 seconds.
If the code returns with the probe out, book a visit; if it only appears with the probe in, the probe itself may need replacing.
