The oven in a range holds its temperature by switching the bake heat on and off around the setting, guided by a sensor in the cavity on newer ranges or by a thermostat bulb on older ones. Some swing above and below the setting is normal, which is why one reading taken during preheat says little. A steady difference in the same direction every time points to a sensor that has drifted, a thermostat that has worn, a door that lets heat escape, or an offset in the control that was changed. Readings taken across a whole bake tell which. Is that normal? Yes, within limits. The oven heats past the setting, switches off, cools below it and heats again, so readings rise and fall. Judge it by the average over a full bake, not by a single glance. ### Can I recalibrate my range oven myself? Many digital ranges have an offset in the settings, and the manual explains it. It corrects a small, steady difference; it does not fix a sensor that is failing or a door that leaks heat. ### Why are my cakes brown on top but raw in the middle? An oven that runs hot does that, and so do a rack set too close to the broil element and a dark pan. Check the rack position and the temperature with a thermometer before blaming the range. ### Can self-clean throw off the oven temperature? Self-clean is hard on sensors and thermostats, and some ranges start running off afterward.
